Sweet Potato Hummus

1 Sweet potatoes (peeled and diced)
14 ounces Chickpeas (rinsed and skins removed)
2 cloves Garlic
1/4 cup Tahini
1/4 cup Water
2 tablespoons Lemon juice
2 tablespoons Harissa
Salt & pepper to taste
Crackers (for serving)
Sliced cucumbers (for serving)
Sliced carrots (for serving)
Step by Step Instructions
- Peel & chop the sweet potatoes, then place them into a bot of water and boil them until they are soft. Rinse the chickpeas and remove the skins.
- Place the chickpeas, sweet potato, garlic, water, Tahini, lemon juice, and harissa into a food processor and blend until the mixture is smooth. Taste and add salt and/or pepper if desired.
- Serve with crackers, cucumber, carrots, or other sides of your choice.
