Sweet Potato Hummus

Vegan!

Ingredients
1 Sweet potatoes (peeled and diced)
14 ounces Chickpeas (rinsed and skins removed)
2 cloves Garlic
1/4 cup Tahini
1/4 cup Water
2 tablespoons Lemon juice
2 tablespoons Harissa
Salt & pepper to taste
Crackers (for serving)
Sliced cucumbers (for serving)
Sliced carrots (for serving)

Step by Step Instructions
  1. Peel & chop the sweet potatoes, then place them into a bot of water and boil them until they are soft. Rinse the chickpeas and remove the skins.
  2. Place the chickpeas, sweet potato, garlic, water, Tahini, lemon juice, and harissa into a food processor and blend until the mixture is smooth. Taste and add salt and/or pepper if desired.
  3. Serve with crackers, cucumber, carrots, or other sides of your choice.
